@NicoD I download and extract the Wine-Proton prebuilt binaries, then let Box64 do the rest. This is the script I used (You might want to change the directories)

I understand now, because the x86/FarmingSimulatorGame2017.exe file forces the use of the OpenGL renderer. Both full-screen and windowed modes are working normally for me. @NicoD How was your setup? I can't get the game up and running. The x86/FarmingSimulatorGame2017.exe won't detect the GPU and quit. The x64/FarmingSimulatorGame2017.exe boots but will crash immediately after the splash screen with this error
